Ho-Ho-Healthy Christmas Meal!

One of my favorite seafood is crab legs, so you have to imagine my excitement when I had it for Christmas dinner. Let me tell you, I enjoyed cooking it as much as eating it!  I know I know, crab legs can be pricey, which is why the key word here is Christmas...Merry Christmas to me!  If you ever feel like splurging on your cuisine, this is a way to go!  It's easy, delicious, and healthy!



Rapini (Broccoli Raab) 
Ingredients:
-2 batches rapini
-10 cloves garlic
-5 tbs extra virgin olive oil
-salt
-pepper

Steps:
1. Cut 1 inch off the end of the stems of the rapini to remove the toughness.
2. Wash the rapini in a strainer
3. Let it sit in the strainer to remove the water
4. Peel 10 cloves of garlic and slice them thinly 
5. Sautee garlic with the olive oil on medium heat until lightly golden. Make sure to continuously stir so that the garlic doesn't burn.
6. Place the rapini in the same pot as the garlic, and stir.
7. Cook the rapini for ten minutes on medium-high heat.  

8. Stir the rapini occasionally to cook evenly
9. Place the rapini on a serving plate and serve either warm/cold

King Crab Legs
Ingredients:
-Desired amount of pre-cooked king crab legs
-A single serving is usually 2-3 legs
-1.5 tbs butter

Steps:
1. Fill 1/3 of a large pot with water
2. Boil water
3. Carefully place the crabs in the water so that it doesn't splatter.
4. Cook the crab legs for 2.5 minutes
5. While they're cooking, microwave the butter in a small bowl or cup
6. Lift crabs legs out of the water so the water drains out
7. Place the crab legs on a plate with melted butter and rapini
Enjoy!




Greek Feta Salad

When I think of a snack, one of the first foods that come to mind is none other than...Cheese!  There are so many ways you can create an easy and healthy snack that involves more than just a granola bar or cracker.  This snack actually contains substance to get you through a busy day!  Rumor has it, it's even been used as a lunch!

This salad is another dish that I've grown up with.  It takes 7-10 minutes to make and it's absolutely delicious!  

This particular recipe should serve about 6 people (with big appetites!)
Ingredients:           

-1 lb block of feta cheese
-1 medium tomato
-2 large green onions
-3 tbs extra virgin olive oil
-pita bread

Steps:

1. Cut the feta cheese into small equal blocks
2. Place the feta cheese in a container
3. Dice the tomato in equal small cubes by slicing it vertically and proceed to cut the slices horizontally

4. Place the tomatoes atop the feta cheese
5. Line up the green onions and remove the sprout ends
6. Dice the onions finely 








7. Place the onions atop the feta cheese and tomatoes
8. Drizzle extra virgin olive oil over the combined ingredients




 8. Stir the salad with a spoon so that the ingredients are distributed evenly
9. Serve with pita bread and enjoy!

Green Beans and Meat Stew Over Rice

Consider what you long for the most when you're returning home for the holidays.  Judging by your interest in this blog, I'd say that one of those things might be home cooking.  Needless to say, this is a delicious dish home-grown from Lebanon.  This is one of my favorite Lebanese dishes.  I usually don't use measurements for this but I'll give it my best:


Ingredients:
-2 cups white rice
-2 cinnamon sticks
-5lbs of fresh/frozen green beans
-1.5 lbs cut sirloin
-salt
-pepper
-3 Fine egg noodle nests (found in Middle Eastern stores)
-2 tbs butter
-4tbs extra virgin olive oil
-1 medium onion
-water

Steps:
STEW
1.  Chop onions finely and pour them in a deep pot with butter

















2. Trim the meat of unwanted fat and cut it into 1" cubic pieces.  Place it in the pot with the onions.
3. Add the cinnamon sticks before stirring

4. Close the lid and let it cook on medium heat for about fifteen minutes.  Don't peek!  
5. Fill the pot with five cups of water and stir.  Continue cooking on medium heat for about 40 minutes (depending on how tender you prefer the meat)

RICE
1. Soak 2 cups of white rice in water and place in a bowl.



















2. Pour extra virgin olive oil in the pan and crush the fine egg noodle nests in a pot
3. Cook the noodles on medium heat

















4. Once noodles are evenly brown, pour the rice in the pot and add 2.5 cups of water
5. After stirring, close the lid and let it cook for 40-45 minutes

Pour the rice in a deep plate and cover it with the green bean stew.
